Tomato & strawberry salad

10 Minutes Serves 2 Vegan
  • 1 tablespoons balsamic vinegar
  • 1 teaspoon fresh lemon juice
  • 2 tablespoons of extra virgin olive oil
  • Sea salt and freshly ground pepper
  • 300g Isle of Wight mixed specialty tomatoes (medium sizes work best)
  • 2 teaspoons chopped fresh tarragon
  • 5 strawberries sliced
  1. Whisk the balsamic vinegar, lemon juice and olive oil in a bowl. Set aside.
  2. Cut the tomatoes into slices and arrange in a single layer; season with salt and pepper. Transfer to a bowl and drizzle with half of the dressing. Add the tarragon and strawberries & toss to give all the tomatoes a good coating.
  3. Divide the tomato mixture among plates. Drizzle with more dressing. Serve immediately.
