Why not start Veganuary with this tomato and pickled shallot salad? Perfect for pack lunches
5 minutes - Serves 2
Vegan
- 225g Isle of Wight Cherry Vine Tomatoes
- 2 shallots
- Half an orange
- 1 ½ tbsp white wine vinegar
- Sea salt
- Pepper
- Soft herbs of your choice (we chose basil)
Wash tomatoes and slice in half. Marinade a couple of chopped shallots in the juice of half an orange, a couple of strips of orange peel, white wine vinegar and salt and pepper for an hour or so. Finally, toss with your tomatoes and whatever soft herb you like.
